I got the beef from Aldi in Waterford, Ireland $9.99/lb! The Beef and Guinness stew was incredible, the beef was so tender!

Roast Beef Dinner
Preheat a frying pan
Season round roast generously with salt and pepper
Add 1 tbsp oil to the pan
Sear beef on all sides until browned
Remove beef from pan
Roughly cut onion, potato, and garlic
Toss in the same pan with a bit of salt and oregano
Transfer veg to a baking tray and place beef on tray
Roast at 180°C / 350°F for 30-40 minutes (depending on size, 20 minutes per lb)
Remove the beef and allow it to rest
Turn the oven up to 200°C / 400°F
Return the potatoes and onions for another 30-40 minutes or until golden brown
Steam carrots and sprouts in a pan with a splash of water, butter and seasoning
Slice the beef and serve everything up

👩🏼🍳 A Few Wee Tips 🔪
– Rest your beef for at least 30 minutes – it lets the muscles relax and the juices redistribute
– Searing on all sides locks in flavour and gives a rich, caramelised crust
– Cooking the veg in the same pan picks up all those lovely beef drippings and seasoning
– A meat thermometer is your best friend – 55°C (130°F) for medium-rare, 60°C (140°F) for medium
