Smoked Prime Rib Roast with a compound butter and finished off in the oven for 10 min. and a Red Wine Au Jus at the Fire Station đ
âą 6 pounds prime rib, bone-in (with bones cut off and tied back on)
âą 1 cup butter, softened
âą 8 garlic cloves, minced
âą 1 tablespoon kosher salt
âą 1 teaspoon finely chopped fresh thyme
âą 1 teaspoon finely chopped fresh rosemary
âą 1 teaspoon black pepper
Red Wine Au Jus:
âą ÂŒ cup drippings from prime rib pan, make sure to separate the fat from the drippings
âą 2 cups beef broth
âą 1 œ cups red wine
âą 1-2 tablespoon cornstarch and water to thicken.
