FOR THE SYRUP
► ½ cup raspberry preserves
► 2 tablespoons water, or as needed

FOR THE RASPBERRY FILLING
► 1 cup heavy cream, chilled
► ½ cup granulated sugar
► 8 ounces mascarpone, chilled
► 2 teaspoons pure vanilla extract
► 12 ounces fresh raspberries, divided
► Confectioners’ sugar, for dusting

  1. Natasha , I have a suggestion how to put raspberries on the top of the cake roll…
    If you add some frosting decorations on the top of the cake roll and put raspberries on the top of your decoration then those raspberries will stay on the top comfortably.
    Good cake roll I also tried and it came out great my friends and family liked the test and the cake design both.

  5. Oh, yummo 😋🤤 Beautifully done, too 👏 I can tell it's not your 1st rodeo ❤ I attempted a pumpkin swiss roll for the holidays, and although delicious, it did not turn out near as well as yours. Have you ever tried adding lemon curd to the mascarpone mixture? I think that would be a delicious addition 😋 🥰
