  1. 'Twas a nice presentation, but I think that it is really sad that poor ol' Pork the Pig, gave his life to be smothered under a mound of SPUDS and BUTTER! 😥
    Perhaps, he should have been dressed up in spices to be wrapped in tortillas, pulled pork sandwiches or at least a green chile stew!

  2. "excess fat" is subjective haha. I don't touch it. I just chop mine into pieces that fit into a sous vide bag and then sous vide it for 2 days at 145 degrees. Put a reverse sear on it after and it's perfect every time. Nice and simple and 95% hands off. Plus it allows me to save 100% of the collagen that I can use for broth or whatever I want.

  3. i made the rice and lamb rezpar from a couple of vids ago. the rice was delicious. i couldn't find the sent gland in the lamb roast o bought so i just removed all the fat hoping i would remove the scent gland with it . this potatoes rezpar in this vid looks' good im going to try making it

I've done something similar using lamb leg steaks and put thinly sliced red onion between the potato layers, lots of rosemary, thyme and garlic and a few bay leaves in with the lamb.I'll certainly be trying this recipe, thanks for sharing, from Duns (home of the Jim Clark Motorsport Museum), Scotland.

  5. I came prepared today, and was ALREADY eating when I started watching. I figured it would keep me from going crazy as I usually do when watching your stuff! It worked, but only so far. I wasn't eating pork and this made me wish I was!

  6. I love pork shoulder. At our Costco in Minnesota their package looks about the same weight as yours but there are two pork shoulders in it. Your recipes look great. I usually plop one shoulder into a covered roasting pan with a dry rub of paprika, brown sugar, cumin, a little chili powder, dry mustard and garlic and cook it in the oven for 4-5 hours at 300F. When it’s done I shred and portion it into 5 oz packages and freeze them. So good warmed up with some bbq sauce. Thanks for sharing these great recipe ideas!
