This looks really good, and beef stew was a comfort staple in our home too. I honestly would like some thoughts from whoever’s out there though on this: recipes like this rely on the meat’s sear flavor and fat to bring the delicious umami and savory aspects to them. Isn’t it missing when you use a soy curl substitute?

I never thought about serving it with rice 🤔 I love beefless stew, I love rice. What can be bad about that mashup?😋

I don't serve "beef" stew over rice, I prefer my stew with a side of bread & butter. To each their own, your dish looks delish!

Stew looks really good. I like mine over mashed potatoes so instead of more potatoes I put parsnip or something like that in ny stew.
I wouldnt serve it over rice but I'm not shocked by it lol I have my stew with (vegan) dumplings 😋
I make beef stew with.. beef & serve it with milky, buttery mashed potatoes. Sorry children but it's NOT beef stew!
