U can make buttermilk by using white vinegar a tablespoon to the milk let it sit a bit .
So if you don't want whole milk or eggs in your recipe you can use flax eggs and a hearty alternative milk (soy is best). The results are the same for not much sacrifice.
Whole buttermilk is always in my fridge because I make pancakes and biscuits every week. Expiration date on that milk? Never a problem. Love you Lan and all of your tips and tricks!

It's easy to mix melted butter with eggs. Just don't over heat the butter to melt it.
Protein pancakes are gonna have to be something I try. While still not 100% healthy food, they are a lot closer to a balanced meal.

I cook my pancakes in ghee (clarified butter), it adds nice flavor, browning and crisp edges. And, there is no need for additional butter after serving.
Lose the seed oil.

Someone in the comments mentioned laban, a cultured drink in their country. That gave me an idea — kefir is fairly widely available, also a cultured drink of yoghurt and milk. I wonder if a berry flavor might make for an interesting pancake?
Why don't people use yeast instead of chemical leveners?

Why use a whisk to stir the batter when the batter gets caught up inside it? Why not a simple spoon?

A little bit of sugar, proceeds dumping a cup of sugar in.
I use, at most, one tablespoon of sugar. Can add sugary toppings later, such as syrup or honey.
I also use a (silicone) spatula for combining flour and liquid batter mixtures, never a whisk unless the batter is very thin.

In my country I always use “Laban” instead of buttermilk since it’s not available, it’s basically a bit sour and thick yoghourt drink

I wouldn't let how many I can fit in a pan dictate the size of the individual pancakes. More likely, she's making them smaller in diameter because it makes the finished pancakes LOOK thicker for the camera to emphasize the topic of the video title.
I do agree with the thicker batter making for a thicker finished product, and thanks for pointing out the difference between buttermilk and clabberred milk. I get so annoyed at perky Youtubers and their "How to make buttermilk!" segments but it's just adding acid to make clabber.
Love Lan! Can you use whole wheat flour for the protein pancakes? I have gestational diabetes and pancakes have been something I make for my kids but couldn't easily partake for the past 8 months. I'm so excited to try the high protein ones today!
