Mutton Chatkhara Boti:
Mutton Chatkhara Boti:
1. Mutton – ½ kg cut into pieces
2. Ginger-Garlic Paste – 2 teaspoons
3. Onion – 1 small (about 40–50 grams)
4. Salt – ¾ teaspoon (adjust as needed)
5. Turmeric Powder – ½ teaspoon
6. Green Chillies – 5 to 6 (crushed or ground)
7. Crushed Red Chilli – 1 teaspoon
8. Kashmiri Red Chilli Powder – ½ teaspoon (for color)
9. Cumin Powder – ½ teaspoon
10. Chaat Masala Powder – ½ teaspoon
11. Crushed Coriander Seeds – 1 tablespoon (roughly crushed)
12. Coriander Leaves – A little (chopped)
13. Cornflour – 2 tablespoons
14. Lemon Juice – 1½ teaspoons
15. Oil – For frying
Chutney:-
1 fistful coriander leaves
3-4 green chilli
2 cloves of garlic
1 tsp salt
2-3 tbsp curd

lemon juice 1 tsp
yogurt 3-4 tbsp = grind all ingredients in a mixi jar!
kabab ingredients:-
1 tbsp of each crushed coriander seeds and chilli flakes
1½ tsp kashmiri mirch
1 tsp cumin powder
1 tsp garam masala
1 tsp chat masala
½ tsp turmeric powder
1 tsp salt
1 tsp black pepper powder
500 g mutton mince+ 50 g fat
1 onion grated and squeezed
1 tbso ginger garlic paste
5-6 crushed green chilli
1 tbsp lemon juice
4-5 tbsp roasted chickpeas powder or roasted gram flour
