Brunois is a good French technique. But I typically use Brunhilda, a German method where I get my wife to go and dice the onions for me. She's pretty good at it too.

Shallots: Would you explain what constitutes a shallot? Is it both halves of the shallot? Plus they come in all different sizes? What is the size of a typical shallot?
I noticed that when she talked about having a sharp knife that she was using a honing rod. Honing rods don't actually sharpen a knife they just remove the rolled edge.
