Ingredients
For Cleaning/Brining:
– 3 large chicken pieces
– 1–2 tbsp white vinegar
– 1 tbsp salt
– Water, as required
For Marination:
– 1 tbsp garlic powder
– 3 tbsp lemon juice
– 1 tbsp ginger garlic paste
– ½ cup fresh yogurt
– 1 tbsp hot sauce
– 1 tbsp soy sauce
– 1 tbsp red chilli powder
– 1 tbsp coriander powder
– 1 tbsp salt
– 1 tsp cumin powder
– 1 tsp black pepper
– 2 tsp chaat masala or tikka masala
– 1–2 pinches orange food colour
For Steaming:
– Water, as required
– 2 star anise (Badyan)
– 1 cinnamon stick
– 4 cloves
– 2 green cardamoms
For Garnishing:
