What about vinegar with the mother? I noticed you had that inyout initial shot, you did not mention it? You only talked about distilled vinegar.
Please make another video explaining when to use them. This didn’t help much!
On a related vinegar note, my wife adds some (bread and butter) pickle juice to her tuna salad for sandwiches, awesome.
What about the malt vinegar…? Great on fish and chips, sautéing with onions for brats, I even use some in my bean soup balanced with bourbon and brown sugar for luxurious layers of flavor.
I watched this in wonder – 8 vinegars? What on earth! And I realized I have 6 vinegars in my kitchen – I don’t keep any Sherry vinegar or Chinese black vinegar. Way to find out!
You didn't say much about when to use balsamic and sherry vinegars.
I thought I'm a bit OCD as I have all of the ones listed here. Only recently discovered Sherry vinegar and with its subtle aromas it became quickly a favourite of mine now.
Agreed, Malt Vinegar is a must in every pantry, and I always have Raspberry Vinegar too.

Recently discovered a side salad of cucumber, carrots and onions marinated in seasoned Rice vinegar. Really tasty!
Could you provide specific examples when vinegar replaces salt? Maybe provide a cooking series showing when and what type of vinegar to use as replacement.
I usually find these interesting and helpful, and about paring down– "if you use just one. . ." But this is a bit over the top. The average kitchen doesn't have room for all of this, and it becomes a lot to deal with. I would say, cider vinegar, balsamic, and one of the Asian ones will get you through most recipes. It's not that the others aren't useful, it's just too much.

When you say a little bit are we talking teaspoon or tablespoon?
I can only keep 3 out of the eight vinegars in my puny condo kitchen. My pantry is very small. White, balsamic and Chinese rice vinegar. I can't be bothered with any apple cyder or wine vinegars. Every pantry should have at least a giant 2 or 4 liter jug of distilled white vinegar on hand at all times. It's way more than a food conditioner and cooking ingredient, it is a versatile gentle yet powerful cleaner.
The only one I don’t have in my pantry is the distilled white vinegar 😅… that’s with the cleaning supplies
Tiny kitchen in my house, but the only one of those I don't have is the black Chinese vinegar. Oh — the rice vinegar is currently residing in my office at work, since it was the smallest bottle.
I used to think I had a vinegar “problem” because I had nearly a dozen but this has vindicated me lol. For autumn salad dressing a pear vinegar is great (and I don’t enjoy pears alone) and my most recent snag is a passion fruit variety. Can’t wait to play with that one!
Add champagne vinegar, please.

is it safe to assume that each of these specific brands in the video are your top recommendation for that type of vinegar?
I’m curious why they block out the names of the non taste test favorites. They don’t do it during the actual taste test and yet here they do. Plus, the bottles are still recognizable and they don’t block the names when the camera is zoomed out.
How long do vinegars last after opening? My red wine vinegar always gets “stuff” in the bottom. Is it bad?
I use the Chinkiang vinegar every day and it has a very rich flavor!

I have these vinegars except sherry, which I plan to get along with a fresh bottle of malt vinegar because I've finally run out after 5 years. I love to just sip a Tbl spoon of good aged basalmic vinegar, yummy.

9 vinegars?!! Who needs that? Or so I thought, It turns out I have every one of those in my cupboard except the Chinese. I use them so regularly I never realized! 😂 The sherry is my favorite. I also have a second, larger bottle of the white for cleaning.😀
My sandwich game went to the next level after I used thin sliced onions, tossed them in a little vinegar, and let them sit while I do the other sandwich stuff.
Strange in the close-ups the blocked out the name of some of the vinegar brands (Pompean as an example). Weird considering ATK is all about recommending brands.
White vinegar is good for cleaning the haze left inside your saucepan after cooking pasta or starchy foods like potatoes. Just pour a small amount straight from the bottle after washing, swish around with a rag, rewash to remove the vinegar smell and it shines like new.
