  1. Hi ATK, it’s difficult to get Sake or Shao Xing cooking wine now. I managed to get hold of Nakano Rice Vinegar (Natural) and Mizkan Mirin and Kikkoman Less Sodium Soy Sauce. Will that be ok? Or do I need to make adjustments on the ingredients and/or measurements? Thanks in advance.

  3. As you may know, the majority of garlic now comes from China. Bulk, peeled garlic is most often processed by Chinese prison labor. A labor force that does not care about cleanliness, quality, or the culinary arts. 🤮
