I just made the sauce using real mirin, and it is just astonishing
Don't cheap out on mirin guys! If you want a recommendation, I bought "Ohsawa Genuine Mirin" from Amazon and it's super tasty. Any mirin that says "aji-mirin" is sweetened with corn syrup and won't taste nearly as good, try to avoid that if you can.

instead of a 15 bottle of Mirin could you just use honey? Which would also eliminate the corn starch?

Also to enhance your teriyaki sauce…specifically use a beef, chicken, seafood broth instead of water.
Preferentially sesame oil on the prep is nicer then the texture of the seeds.

Can substitute rice wine vinegar or Sherry cooking wine if you don't have the Sake. This is the exact recipe I have used for over a decade, minus the sesame seeds.

I just made it last night, but my sauce ended up turning into a jelly instead of a sauce. Not sure what went wrong. The flavor was good just not the format. I was hoping more of a sauce.

Why would you not add the teriyaki sauce while cooking the chicken? simply just dipping it does not make since if you want a true teriyaki chicken. the way you made it it's just fried chicken with a dipping sauce on the side.

Hi! I really want to make this however I'm concerned about the alcohol content. Does boiling the sauce down to thicken it reduce the majority of the alcohol content? Thank you!
As an Asian I recommend that you shouldn't wash your rice too clean like that. Rice has a thin layer which contains alot of nutritions, and washing it too much can swipe away that layer. It should only be washed 2 or 3 times maximum. Don't worry cuz the rice itself is really clean.
Finally tried your teriyaki sauce recipe and – holy CRAP it was super salty and nowhere NEAR sweet! So I re-did the sauce using low-sodium soy and added 1/2 cup granulated sugar and it was MUCH more balanced without being too sweet. I don't know if it was my ingredients though or something – the Sake, Mirin and Soy I was using were all imported from Japan (not even any English on the labels, which is fine because I read Chinese/Japanese), so perhaps if you're using the same ingredients marketed for the American stores/palate they are different?
You added an extra 1000 calories to your veggies by dumping them into the chicken fat.. which completely destroys the entire point of the veggies.
Why would you think your meat intake is too heavy?
I got pretty good at making rice in a pot until I got a rice cooker that makes it perfect everytime

About how long does it take for the sauce to completely reduce one third ?
Just cooked it, it tasted great. The teriyaki was a bit overwhelmed by the taste of ginger, gonna be more carefull with that next time. Overall I had a great dinner, definitely going to make it more often. Thanks for the recipe!
