INGREDIENTS
Flour 00 500 g
Water 250 g
Salt 10 g
Oil 20g

For the filling:
Peeled boiled potatoes 500 g (raw 550 g)
Salt
Thyme
Pepper
Fontina cheese 200 g
Sweet scamorza 200 g
Oil for cooking to taste

METHOD
Mix the flour, water, oil and salt in a bowl. Get a smooth ball and let it rest for 1 hour.
Mash the potatoes in a bowl with a fork, season them with salt, pepper and fresh thyme. Let the mixture return to room temperature. Grate the cheeses and keep them aside.

When the dough has rested, divide it into 4 parts and with the help of a sprinkling of flour, roll out with a rolling pin until you obtain a circle of about 20 cm. If it shrinks, let it rest for a couple of minutes. Stuff the center with fontina cheese, mashed potatoes, scamorza cheese and close by matching the edges of the dough, as is done with gyozas.

Heat a pan, pour the oil and cook the bread for 4 minutes on one side and 4 on the other covered with a lid, this way there will be a delicious crust and the inside will melt well.
