  1. I made it the other night for guests. The filling was great, the crust was nothing special. Just go with Graham cracker or Oreo crust works just as well but with more flavor.

  2. I made this pie followed every step watching the video. I served it to my guest they all spit it out. I tasted and spit it out too. However, the cream topping was good. I was so embarrassed. No dessert tonight 😝 I throughout this recipe!!!

  3. I made for family, filling is incredible. The crust was meh. Couldn’t really taste much of anything. And there was too much for a 9” pan. I’ll definitely make again and hopefully refine a little with quantity of saltines. I’d probably also add a little more salt to the crust.

  4. The crust appears higher when taken from the oven. When removed from refrig it crust seems shorter. Did filling expand due to cold?
    Can this pie be frozen and creamed at a later date.

  5. We just called it Atlantic Beach pie and it originated, I believe, in the Morehead City area. We used the egg whites to make a meringue,
    however, instead of whipped cream. It s a version of “Magic Lemon “ pie from Borden’s.

  6. Made this pie (2 actually) for the first time last night for friends. Pretty darned amazing if I must say. My wife was concerned about the whipped topping not being sweet enough. It was a perfect combination of ingredients. My crust didn't hold together like Ashleys did so looks like I have reason to try another one soon. Great job ATK!

  7. This looked so yummy but, alas, I can't have anything from cow's milk due so I think I'll try making this vegan. Everything use that was a milk product, I can find in a vegan version. I hope it works!! I think I'll try Aquafaba for the eggs instead of the powdered stuff. Most of that stuff is just nasty.

If you ever want a very easy to make very delicious North Carolina lemon pie this is the one to make thank you Ashley for the recipe I have tried it made it and eaten about five of them now and I'm about to make another one today so for all those who love lemon pie try this one and again I would like to thank Ashley from Cook's Country for the recipe
