1) Chicken GheeRoast Ingredients
To marinate the chicken
• 500 g chicken
• 1/4 cup yogurt/curd
• Salt to taste
• 1/4 tsp turmeric powder
Ghee roast masala
• 2 tbsp coriander seeds
• Fenugreek seeds (15 nos.)
• 1 tsp cumin
• 1 tsp pepper
• 1 tsp fennel
• 4 cloves
• 1-inch cinnamon
• 10-12 bedgi red chilies (substitute Kashmiri red chilies )
• 8 garlic cloves
• a small ball of tamarind
• 1/4 cup of water
For making Manglorean chicken ghee roast
• 1/4 cup + 1 tbsp of Ghee
• 3 spring curry leaves
• 1 tsp jaggery
• 1 tbsp Lemon juice (Add as per taste)
2) Pepper Chicken Ingredients
To marinate the chicken
• 800 g chicken
• 1/4 cup Yogurt
• Salt to taste
To make pepper chicken masala
• 1 tsp cumin
• 2 tsp black peppercorns
• 1 tsp fennel
• 2 tbsp coriander seeds
• 1-inch cinnamon
• 1 green cardamom
• 4 cloves
Other ingredients
• 1 inch ginger
• 10 garlic cloves
• 2 tbsp oil
• 2 onions, chopped
• 1/2 tsp red chili powder
• Salt to taste
• 1 tbsp lemon juice
• Curry leaves
• coriander leaves
3) Chicken Masala Ingredients
To marinate the chicken
• 500 gram chicken
• Salt to taste
• 1/2 tsp black pepper powder
• 2 tsp ginger-garlic paste
• 1/2 tsp spicy red chili powder
• 1/4 cup yogurt/curd
To make the chicken masala
• 3 tbsp oil
• 5 cloves
• 2 green cardamoms
• 1-inch cinnamon
• 2 onions
• 3 tomatoes
• 1/4 tsp turmeric powder
• 1 tsp Kashmiri red chili powder
• 2 tsp coriander powder
• 1/2 tsp cumin powder
• 1/2 tsp garam masala powder
• 2 green chilies
• Coriander leaves
4) Chicken Sukka Ingredients
Marinating the chicken
• 500-gram chicken
• Salt to taste
• 2 tsp lemon juice
• 1/4 tsp turmeric powder
For Sukka Masala powder
• 10-12 Byadagi red chilies
• 1 tbsp Coriander seeds
• 1/2 tsp Fennel seeds
• 1/4 tsp mustard seeds
• 1/2 tsp Cumin
• 1/4 tsp Fenugreek seeds
• 1 tsp black peppercorns
• 1-inch Cinnamon
• 2 cloves
• 1/2 star anise
• 4 garlic cloves
• Curry leaves (2 spring)
• 1/4 tsp turmeric powder
• A small piece of tamarind
Other ingredients
• 1-inch Ginger
• 5-6 garlic cloves
• 1/2 cup freshly grated coconut
• 2 onions
