OTTO Pressure cooker:
Don’t you just love EASY one Pot Meals? I do. Pork is much easier to get in Thailand and much cheaper as well. This pork stew is really delicious! It is flavorful and has a kick with the cayenne pepper. You will LOVE it!
EASY PRESSURE COOKER RECIPES: Best Pork Stew Ever
INGREDIENTS
1 1/2 pounds pork shoulder or roast, cut into 1 inch pieces
1 tsp black pepper
2 tsp salt
2 tbsp dijon mustard
1 tsp cayenne pepper (more or less for your taste)
1 tsp oregano
1/4 tsp nutmeg
4 cloves garlic, chopped
1 medium onion, chopped
2 medium potatoes, cut up (about 2 cups)
3 medium carrots, cut up (about 3 cups)
1 cup red wine
1 cup tomato juice
3 bay leaves
2 tbsp corn starch
2 tbsp water
parsley (optional for garnish)
INSTRUCTIONS
1) Put all ingredients into pot, except for corn starch & water
2) Cook for 40 min with lid locked & pressure valve closed (per your pot)
3) Add cornstarch mix
4) Cook for 15 minute with lid open
5) Serve over rice, quinoa, mashed potatoes or your favorite starch
NOTE:
My pot is 5 liter, about 5 quarts or 20 cups. Adjust the recipe to your pot size.
BONUS:
If cooking on stove top, simmer low for 45-60 minutes, stirring occasionally
If cooking in oven, bake on lower rack at 275 degrees for 4 hours
If cooking in slow cooker, cook on HIGH for 3-4 hours

finished it, good will make again! Next time less salt, far less. 2 tsp is far too much. Or I made a mistake. I used too much Cayenne also. But I really enjoyed it. It is inexpensive to make. The pork gets very tender and pulls apart like roast beef chunks. A could make this with almost any meat. The Dijon mustard doesn't stand out. I had to add more tomato juice because it was too salty, BUT… Thumbs up!
I am making this, right this moment. I put 1tsp cayenne. I chopped up the onions fine in a Ninja chopper. Because I WANT them to "disintegrate" into the stew. I sauteed the onions/garlic FIRST. Then, the pork added, with ingredients, and braised it. All ingredients the same as recipe. BUT- I'll cook the pork w/liquids for 30min, then dump in carrots, potatoes, and I added celery 'cos I like it. Then, 10min more pressure cook. I guess I might ad more of this or that, when it is finished, and I taste test it. 🙂
the long cooking time, 40 min, seems like will just destroy a lot of vegs. I am thinking to make this today. I might cook pork for 30min, release, add delicate ingredients, and pressure cook another 10min.
Is this recipe hot spicy? I always cook for my neighbor, and she don't like it too spicy. She likes BBQ, but she don't like nose-running spicy. Thanks for posting your recipe. I have some pork, I want to try it out.
