At the end, Julia gives Dan the most genuine "well done!" I've seen her give to any of the chefs. You can tell the recipe is delicious and she is really impressed

mapo tofu should use firm silken, I'm all up for customisation, but this is one of the characteristic ingredients. it won't taste the same without it

Jeez, this is a nauseatingly white approach to this dish. I'm sure it tastes good, but it seems so detached from where mapo tofu comes from that it comes off as disrespectful…

I made this with beyond beef crumbles and vegetable stock instead of chicken. . It turned out really, really well.
