I make a mean vegetarian eggplant lasagna by thinly slicing, breading, and frying the eggplant. They come out like fried zucchini and are delightful by themselves.
It does not grow in dark shady places……lol

There are more varieties than just that purple bulb. The small round green eggplant is often eaten raw in SE Asia.

Nightshades, or "solanaceae" are a family of plants that contain solanine, a potent toxic alkaloid.
They are ultimately all poisonous, just as their most well known cousin belladonna, also known as "deadly nightshade".
Eggplant's like to grow in dark, shady places? Apparently you've never grown an eggplant.
first take nightshade aubergine … cut off plant … walk over to pigs … and let them eat !!! ewww almost as crawling skin as okra!
Carbs probably sell cookbooks to most people but obesity is a big problem with most people. Carb-free options would be good.
