  1. I love both Saigon and Ceylon cinnamon. Ceylon for its deep, balanced flavor and health benefits. Saigon for its punch and brightness. Ceylon is known as "true" cinnamon, whereas Saigon and others are in the cassia family.

  3. I gave this video a like anyway, but these cinnamons that you tested aren’t generally found at grocery stores, unlike the ones in your thumbnail. I was disappointed that you didn’t taste test the McCormick and Spice Island ones. 😕 Also, I looked at my grocery stores and couldn’t find Ceylon cinnamon, so I had to mail order it.

  4. If you are watching this review, you are probably a cinnamon lover. I go through a lot in sweet and savory dishes, herbal teas, and as kombucha and water kefir flavoring. Cassia is extremely high in coumarin content. As little as 1/2 tsp of cassia per day can cause serious, permanent liver damage over time.

    Unlike Cassia, Ceylon (true) cinnamon is safe for regular consumption. It's also delicious when you buy it fresh in stick form (many individual pieces of bark layered into each stick). Much more flavorful than pre-ground cinnamon.

    This is the only test kitchen review that I take issue with, and I feel it is a disservice to viewers not to mention the coumarin content and its associated health risks. I wish I had known about it 20 years ago. Cassia cinnamon should come with a warning on every jar.

  5. No mention that for years (and still) instead of actual cinnamon from Sri Lanka (Celon), Americans were using Cassia, labed "Cinnamon U.S.P." due to some kind of trade embargo.

    Oh, there, Jack slipped it in near the end.

  6. I'm not surprised at all that Penzey's Vietnamese cinnamon was the top pick of the taste tester because its flavor is outstanding. I discovered it years ago and bought bottles for family members. It's in a class by itself.

  7. Pure cinnamon oil will add an extra kick. A single drop or two added to anything will add a volcanic spiciness of cinnamon that will bring tears to your eyes and fire to your mouth. (Note, be careful not to get it in your eyes or on your contacts.) Not for the faint of heart.
