    Ingredients:
    2 medium/large chicken breasts
    a few slices of mozzarella
    2 tsp green pesto
    handful of sun-dried tomatoes, chopped
    small handful of spinach, chopped
    2 tbsp gf plain flour

    1 egg, beaten

    75g gf breadcrumbs

    Vegetable oil spray

    Method:
    1) Carefully slice a pocket about 3/4 of the way through each chicken breast, don’t go all the way through.
    2) Spread a layer of green pesto inside, followed by some chopped sun-dried tomatoes, spinach and slices of mozzarella. Hold the chicken together and feel free to use cocktail sticks if you wish.
    3) Dip the chicken in the gf flour, followed by the beaten egg and then into the gf breadcrumbs. Spray with a little veg oil if you wish to help colour it.
    4) Air fry for about 18 minutes at 180C and check with a food thermometer to ensure the chicken is fully cooked through. I also turn mine over during cooking but you don’t have to.
    5) Serve up with some Italian fries, salad and a whole lotta love ❤️
