  3. I'm confused. As you're slicing the beef thin you say "thinly sliced beef does not cook well in high temps". Then when you actually deep fry the beef you say "use very hot oil as not hot enough makes a bad texture" (don't quote me word for word) but that's confusing.

  4. Thank you Chef John for excellent shows. The care you take in the prepping and delicious results of each dish. Explanations helps to understand better why certain procedures produce better tasting food. I can now make same dishes tastier with your methods. Can Chef John recommend the brands of sauses he uses.
