Why was it even necessary to make a video about this? Common sense would kick in. Well, it would for most people.

So what does a chilled sheet do? Toss one in the freezer then try it. I’d like to see those results
What about putting your dough on parchment paper and pulling them onto a hot pan….?
What about bread or muffins? They're contained inside the wall of the baking pan. Any deleterious affect?

I take mine out and fan them, while sternly telling the dogs no, go away. You grab firmly on one side and swing up and down, like a paper fan. It's quite the spectacle, but very effective for quickly cooling down your cookie sheets.

Why not cool the pans in cold, running water? Buying more pans is easy too. Not expensive at all. I pick them up at yard sales.

I just pop my cookie sheet in the freezer, and also use dough I've chilled for at least an hour or two, to overnight. I'll clean the excess bits of cookie into the trash, use a paper towel to lightly oil, put the chilled dough on the chilled pan and pop it back in the oven =)

So at work I always chill all my dough balls/ sheets in the walk in for a half-hour, they didn't even address what COLD baking sheets and cookies do. Not helpful.
Also not even sure if this is conventional or convection oven.
or take it out of the oven earlier and don't flatten the cookie dough or put on colder cookie dough, get over yourself people

Before I bought multiple rimmed baking pans I would cool them quickly with slightly dampened dish towels kept in the freezer while batches were baking.

What does using a sil-pat do to this issue? My understanding is the silicone pads mediate the heat. Maybe not enough?
It's a non-issue with a silcone baking mat. 1 more win for silicone kitchen tools.
Is it better to freeze the dough or the cookies?
What about eating less? You can keep cookie dough rounds in the freezer and bake them frugally. Bake all at once and they will all be eaten, as there is no such thing as a left-over cookie.

Good video. Tip… always put another rack below the rack the cookies are on. If your cookies are dark on the bottom, Place another empty cookie sheet on the lower rack under the cookies, when you do the next batch. It will act as a heat shield between the lower element and the cookies.

Well, there is this thing called a cold water tap, once he sheet has cooled somewhat from the last batch and while you are stealing …, oppsy I mean quality controlling the batch, run it under that to cool it faster…
There is some good info from this site. But, I have watched almost all episodes over the last few years and much of the advice makes cooking much more difficult than it has to be.
If you're making huge batches of cookies it's probably better to invest in multiple cookie sheets. They're not particularly expensive, and if you do a lot of baking they pay for themselves very quickly.
What about putting the sheets in a freezer or refrigerator for a few mins?
When I don’t want to wait I rinse mine off in cold water! Way quicker than waiting and I can get the bits of cookie off before the next batch!

Spend a tad bit more money and buy a third cookie sheet. 🙂 It only adds about a quarter inch depth to storage requirements. I had actually wondered about this as I spooned cookie dough onto hot cookie sheets.
Another solution to the hot cookie sheet problem is to directly place the cookie dough in your mouth
