ingredients:
3/4 cups raw cashews
2 cooked beets
1 large onion
3 garlic cloves
1 tbsp lemon juice
2 tbsp olive oil
Pasta
Fresh basil
How to:
-Soak cashews in boiling hot water. Let stand for at least 10 minutes
-Bring a large pot of salted water to a boil. Add pasta and cook according to package directions. Drain
-Heat 2 tablespoons olive oil in a medium skillet over medium-high heat. Add onions and let cook until soft. Add garlic and cook 1 more minute. Remove from heat.
-Combine onions, garlic, cashews, water, lemon juice, and beets. Process until smooth.
-Garnish with basil, salt and black pepper
