Tortilla chips
Scallions, chopped
Cilantro, chopped

BBQ sauce
Queso Recipe
4 Oz can fire roasted chopped green chile
5 Tbsp flour
1/4 Cup onion, chopped
3 Garlic cloves, chopped
3 Tbsp butter
Salt and pepper to taste
1/4 Cup heavy cream
1 1/2 Cup cheddar cheese
1 Cup pepper jack cheese
1 1/3 Cup stock stock
Pinch of cayenne pepper
-In a pot over medium heat add butter. Once melted, sauté onions and garlic. Add flour and mix until it becomes a thick paste. Add chicken broth and whisk until the Sauce thickens, about 6 minutes. Once thickened, remove from heat and add cheese. Mix until it is a smooth consistency.
Add green chile, salt and pepper to taste, cayenne pepper, and heavy cream. Mix until well combined.

Shredded Beef
2.5 Lbs chuck roast chopped into cubes
1 Onion chopped into chunks
Neutral oil
2 Tbsp tomato paste
2 Cups beef broth
1 Tbsp Worcestershire sauce
4 Garlic cloves, smashed
1/3 Cup BBQ sauce
Seasonings:
1 1/2 Tbsp brown sugar
3 Tsp kosher salt
1 Tsp black pepper
1/2 Tsp smoked paprika
1 Tbsp chili powder
1 Tsp garlic powder
1 Tsp onion powder
1/2 Tsp dry mustard
-Preheat oven to 325°F. Mix together seasonings in a small bowl. Reserve 1/4 of seasonings. Cut the beef into chunks and season all sides. In a Dutch oven over medium high heat, add 1 Tbsp neutral oil and sear beef on all sides, remove, and set aside.

-In the same pot, add tomato paste and cook for about 2 minutes. Add onions, chicken broth, and BBQ sauce and mix. Add remaining 1/4 seasonings and garlic cloves, mix.
-Add beef back into pot, cover, and place in preheated oven for 3 hours and 30 minutes.
-Remove beef and shred in a sheet pan. Broil beef for about 2-3 minutes, until slightly crispy.
-On a plate or tray, add layers of tortilla chips and nacho cheese. On your final layer add shredded beef, scallions, cilantro, and jalapeño. Drizzle with BBQ sauce and enjoy!
