When seasoning the chicken breast, to get better and different flavor, mix onion powder, garlic powder or garlic salt, celery salt and/or cumin and season the meat then go from there…

Why did you not deglaze the fond with some white wine or dry vermouth and add it to the sauce?
Why do you have a sauce or topping for nearly everything you cook? What is wrong with the natural flavor of the meat or potato or whatever you make. You really only need a sauce if something is cheap or poorly prepared in the first place. Otherwise, just eat the sauce and save the cost of the meat.
