America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.
Each week, the cast of America’s Test Kitchen brings the recipes, testings, and tastings from Cook’s Illustrated magazine to life on our public television series. With more than 2 million viewers per episode, we are the most-watched cooking show on public television.
More than 1.3 million home cooks rely on Cook’s Illustrated and Cook’s Country magazines to provide trusted recipes that work, honest ratings of equipment and supermarket ingredients, and kitchen tips.

NO! Never store ground or whole bean coffee in a fridge or freezer … presenters who recommend this are deluded and should apply for a brain transplant! Transferring coffee from a cold or freezing temperature into a warm/ambient temperature and then back again will create? … you got it: Moisture!
And moisture encourages what? …. you got it: Mould! Move on every one, nothing to see – or hear – here, as they say in the movies.
That girl is cute. I can't stop focusing on her mouth/teeth and think about cheshire cats
You should only buy coffee beans from roastery that puts the roast date on the pack. Even then most coffees are at least 2-3 weeks old when they hit the shelf in the supermarket. So best thing is to go to your local roastery and buy fresh coffee that you will consume within 7-10 days.
wow, useful tip. thanks
so all those coffee that are sold at the supermarket in vaccum seal bag are no good since they dont puff up?
Just buy beans from a reputable coffee shop or roaster that prints the roast date on your bag. 2nd only buy the amount of beans that will carry you for two weeks and leave the guessing out of the whole thing. Buy small amounts often. Treat coffee just like you would fresh produce.
