  1. Your videos are just great, both didactic and fun to watch. One question: you´ve covered the chicken breast with flour, but in another video recommended not to do that with meat in order to have a better Maillard reaction. When should it be used or avoided?

  2. Chef Jean-Pierre does it again – another recipe that can be made in small portions for those of us in the weight loss surgery community. Also, lots and lots of good lean protein. I'm making this for dinner tomorrow night and I'll be back with some PIREPs (any pilots?) here in the doobley-doo (any AvE fans?).
