165 is too high. Pull at 160 and let rest. By the end of the restong period, it'll be at 165, as opposed to pulling at 165, which will be closer to 170.
Its been tested. Brine for juiciness but less flavor, cook without brine for the gamey flavor but not that much juice. This applies only for chicken and turkey.

What if you don’t have the thermometer
Pull it off at least 5° before 165. It will raise in temperature after cooking. Professional chefs usually say pull it off at 155.
