The recipe for dinner rolls is amazing. I use it the dough as a brioche dough for all sorts of things.
I push the ball through a tight hole between my index and thumb close to my palm letting the hole get tighter and tighter as the dough is pushed threw. Perfect everytime.
Is there an appreciable benefit to pinching before rolling? I learned to just start straight in on rolling and have always been happy with the results, but I wonder if I'm missing something.
