I have made butter sauce quite a few times and thus have had my share unpleasant experiences watching the sauce splitting and ruining my dinner. I'm quite sure I have narrowed the cause as to why the splitting of the sauce (emulsion) occurs and the cause is that the acidic level is not high enough – a problem one will not have if the sauce is mainly based on lemon juice and butter.
