Taking Cooking food back to basics.
Ingredients:
– 4 cups of stale bread, cubed (hearty bread like French or sourdough works well)
– 2 cans (379 ml per can ) of Evaporated Milk, whole milk, or heavy cream for a richer pudding
– 3 large eggs
– 1 cup (200g) granulated sugar
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– 1/2 teaspoon nutmeg (optional)
– 1/2 cup (75g) raisins or a mix of dried fruit (optional)
– Butter for greasing the pan
Grease a 9×13-inch baking dish with butter.
oven 350°F (175°C). 45 mins
Air fryer 320°F (175°C) 35mins

Black Country bread pudding,is much the same as your recipe but has melted butter,grated rind and juice of a lemon and orange and a few more dried mixed fruit.The consistency was more sloppy . Put hairs on ya lungs ….. Good old fashioned grub . Keep up the inspiration ,ya magic 😊

My mum used to make this and it was my favourite pudding. And I love the way you say, 'chuck it all in' it's how cookery lessons should be conducted, no pseudo posh accents, just a good old northern way of giving instructions and above all, confidence too. I think I'll make it for my grandsons, but instead of raisins, I'll use chocolate chips, because they are fussy. What do you think?

I LOVE bread and butter pudding so now I have to make this! My dad used to give us bread soaked in warm milk with sugar as a breakfast treat occasionally. I’m 76 now and still make it because of the memories it brings.

For a lower calorie version, I mix skim milk powder with much less water to get a rich milky taste without fat. I don't use sugar in the pudding, but eat it with honey or jam. I often add chopped apple or banana. Another way is with a can of crushed pineapple. Or use lemon flavouring instead of vanilla.
I'm enjoying your recipes. Some of them I've only seen mentioned in British novels, so it's interesting to see what they are in real life!

Yep,I made some of this the other week ( I used some raisins soaked in some Irish Whiskey,a diced apple& a little strawberry Jam) and I baked it on a lower Heat ( for longer obviously) which I think worked out better!)
.But this BP was really nice,( The Colour& texture was spot on) So the Bread was most def suitable and the evaporated or Carnation Milk,I think is ideal! Those imo are game changers👍 Great Job!
P.s I always liked the BP they sold in the Bakerys in the UK,but how do they get that really dark colour?

I made bread pudding last week. I came from a family of 13. We never had a lot of money. My mother was born in 1933 and she used to make what she called war time bread pudding. Bread soaked in water and wrung out. Then she would use a bag of mixed fruit, a pot of mixed spice, sugar and heres the unhealthy thing lard. She would mix it all together and make peeks and put sugar on the top. She never used eggs or milk. She always followed her mother and Grandmother's recipe. Bread pudding is so under rated these days. Love your channel, i am binge watching all your amazing recipes.

Bread pudding is one of our favorites! Thanks for sharing this method. The crispy top with a sprinkling of sugar is one difference in the way we make it. I think we will be adding that and the evaporated milk to our recipe. We add other things to it, depending on what we have on hand. Chopped up nuts and other types of dried fruit for example. Another favorite we do (in addition to having it with ice cream or milk) is to make a lemon sauce as a topping. Anyway, really appreciate what you’ve shared here! We like variations and options with our bread pudding. The crispy top is something I am really looking forward to trying.

That looks bloody lovely. I was brought up on this is Essex and Norfolk. It was my Dad's favourite, so we had to eat it. There was no carnation milk or milk. It was stale bread, water, allspice, raisins and egg. It was as grey as a damp February day in Great Yarmouth. I've got to try this, but I may need some bigger T-Shirts.
My Gran used to make this always served cold, and it was very dark, I've tried to replicate it with various brown sugars, or quantities of spice, even molasses, but can't hit the colour to flavour, mind you my taste buds have probably changed from being a kid 😂
I grew up in Lancashire from a poor family my mam used to make bread pudding every week, was just bread, milk & currants. No accompaniments like custard or ice cream. But I still remember the taste (I’m 70 now) it was amazing. Thank you for the recipe 😊 love watching your videos.
My grandmother used suet and lots more fruit. Soaked the bread in water first perhaps due to cost😊
Evaporated milk! Best for puddings with that taste of home.
