As someone whose Great, great grandfather came from Italy I do not disagree about the pasta. Everyone has different options about food and what ever makes you happy is what you should do
I think aldente should be reserved for fresh made pasta. Like, make and cook for 30 seconds fresh.

This is my FAVORITE pasta- add a dash of double cream and cheese it's amazing.
