  1. If specifying kosher salt, then you really need to specify which brand: Morton’s and Diamond Crystal have wildly different density. Morton’s is nearly twice as heavy as Diamond Crystal. (Morton’s kosher salt is the same density as table salt.)

  3. No. The breast is wrapped . In. All . That . Skin. Debone the Breast. Wrap it in its skin. Oh my. You are wasting a whole breast. The gochuchang is sublime. …but this a sublime recipe. It’s beautiful and delicious. Thanks for sharing. But just sayin about that breast.

  4. I wish to have instructions to cook an old decrepit chicken. Everybody wants young. I want an old chicken or turkey. Teach me how to cook that bird and I will listen intently. I would love if grocery stores actually listed the turkey or chicken as “this bird live to a ripe old age and we decided it was time to harvest”. Now that would be a cooking show I’m willing to pay to be a part of

I was a travel nurse and one of the large hospitals I contracted with had an excellent cafeteria with several different ethnic cuisine offerings. The oriental section was excellent, and until now I didn't know what a certain vegetable was. Now I know it was the Korean radish , thank you so much ❤

  7. I'm going to be cooking up a batch tomorrow. I got the chicken soaking in the marinade, but it well be 24 hours before I can cook it. Hope that's not to long? First time using Gochujang paste and I was surprised how amazing it smelled! Wonderful, sweet and spicy aroma I can't wait to try it! Thanks for this recipe and guide. I enjoy trying new things.
