  2. The ginger that you add will definitely change the original menudo that I come to know as a Filipino. The pork can be marinated with soy sauce, lemon, and pepper. I don't like adding sugar in my menudo version. I'd like to stick to the very traditional way of cooking the dish but with my own modern twist. For ensuring no after taste from the liver by boiling the meat and liver together before frying. It will definitely improve the taste. Thanks.

    Just a little tip sir, you may submerge mongo in water overnight or more so it will just take a short time to boil (tipid po sa lpg or kuryente )😊
    Dahon ampalaya is yummy with mongo 👍
