I prefer mayo on the bread to toast up, a thin layer not a coat! I cover as it’s cooking to soften the cheese better, and I’ll definitely try the chopsticks next time I always hated to steam underneath

i use mayonnaise to “butter” my bread and it works every time perfectly. And NO mayonnaise taste.
Instead of butter, spread on mayo. You will get better browning and not have any mayo taste.
