Hey, so I used your recipe as a basic guide and threw together something very much like it. Instead of the carrots and yams, I put potatoes in there and put it in the Traeger for a little over an hour at 375. I had the thermometer in, my wife got home from work, had a minute to unwind, and in a few more minutes it read 155° inside. Bam, out it came, sliced up and here you are, Honey.
