⭐️ EASY Broccoli Cheese Rice Casserole

INGREDIENTS
1 lb Rotini pasta
1/4 to 1/3 cup fresh lemon juice
zest of 1 large lemon
1 Tbsp Dijon mustard
1 clove garlic
1 Tbsp minced red onion
1 Tbsp dried Italian herb blend
1 Tbsp red wine vinegar
1/3 cup to 1/2 cup olive oil
salt and pepper to taste
4 to 5 scallions
1-pint grape tomatoes
1 small can sliced black olives
1/3 cup grated parmesan
fresh parsley for garnish

  1. That looks really good! My mom used to make something similar and she would use bottled Italian dressing. I want to try this and make my own! No one else in my house will eat it so it will be all mine!! 😈🤣

    P.S. I'm amazed at how many people don't understand why you didn't rinse your pasta! NEVER RINSE YOUR PASTA! It washes off all the starch and then the sauce won't stick to the noodles. Just account for carry over cooking and cook the pasta al dente

  2. This looks delicious, I'm going to have to try it. I've always used the 3 color pasta with drained and rinsed black, navy, garbanzo and kidney beans with steamed broccoli and carrots, onion, black or green olives and the Italian dressing. More of a bean/pasta combo. But, even though it's great, there's never enough pasta for me so this is next on the list, thanks!

  3. I love pasta salad, though my kids won't eat it. I like lots of veggies in mine – zucchini, yellow squash, bell pepper, a little onion, artichoke hearts. I will blanch carrots and broccoli to add them as well. But I think your vinaigrette looks amazing. I'll have to try it.
