  1. The real problem here is that you never want to have the pasta already made while you’re making the sauce. Do you want to have the sauce ready right when the pasta is and then with a strainer scoop the pasta out and into the sauce pan. After you stir it with the sauce, scoop some of the starch water from the pasta pot onto the pasta, this gives it a smooth silky texture. Then add whatever garnishes and stir them in with the pasta
