Pancetta vs. Bacon vs. Prosciutto vs. Speck



Have you tasted all four of these?

While they are often given as substitutes for one another, each one of these meats have a distinct flavor and texture based on which part of the pig they come from and their method of production.

I would recommend tasting them side by side to learn the effects of different processes.

  1. As a German, I would't call that Speck, but Schinken. Speck is made from pig belly and is about 50% fat and 50% meat, Schinken is made from the pig's leg and a lot less fatty (like the thing in the video). And there is also Rückenspeck (fatback), which is almost 100% fat.
