Nope, using electric mixer is a big no no in making flan. You are over mixing the ingredients.

As a Latin we make a lot of Flan you can make the caramel without the water also if you cook it and it gets too dark it becomes bitter. The color should be lighter like caramel candy. Everything else you did I do too!! Great job!!😊
