The sherry vinegar really makes this dish. My family had shrimp ceviche at a restaurant that was way too sour, so I wanted to find a recipe to make it the right way. This did it perfectly.
This is mexican ceviche ..the Peruvian ceviche is call leche de tigre .
Peru was never founded 2000 years ago before colonial establishment. So it is not Spanish at all, it was simply adapted and spread throughout Latin America and spread.

Great video but I hate to tell you that lime juice and lemon juice do not actually cook the shrimp or fish or any seafood all it does it creates an environment where bacteria cannot grow and then you’re taking whatever proteins that are in the seafood out that’s why it turns white you still are essentially are eating raw seafood
I made this tonight and it turned out fantastic! The only amendment I made is to add about 1/4 teaspoon Tabasco sauce. That tiny bit of heat made it exactly like the ceviche I grew up on in Arizona.
I thought they main event of the ceviche is the acidity taste in the background?? ..I know nothing about ceviche I'm just asking here…

Ceviche may have originated in Peru, but it was certainly perfected in Mexico.

Use an electric citrus juicer for limes and lemons. The sieve is part of the juicer. Idk what type of juicer he ‘s talking about. I’ve had mine for years

Shouldn't the salad ingredients be dressed separately with preferably a lighter dressing from the prawns? They also get prawn-flavoured as well I guess.
Personally I prefer different flavour profiles on my plate to keep it interesting and prepare protein toppings separately from the actual salad.
