    Excellent. I'm glad you use Vietnamese rice paper (Bánh Tráng) and not Chinese spring roll wrapper.
    Some Vietnamese cooks use the Chinese spring roll wrapper, which is much thicker than Vietnamese rice paper. The Chinese wrapper coarse and much thicker than Vietnamese rice paper; it makes Vietnamese egg roll taste like the disgusting Chinese roll.

  3. Grew up in Cote d'Ivoire (Ivory Coast, West Africa), where there were a lot of Vietnamese people. We bought these eggs rolls, which we were told were called 'nem(s)', from their restaurants all the time! They are rhe best egg rolls. In France you can also find a lot of Vietnamese restaurants and have nems!!! Yummy
