I work in the fishing industry. Always when you can, buy while calamari or squid. Whwn you buy only the tube is treated with a chemical to absorb more water (so they can sell "more" product) and it has kind of a blesching effect on the meat. Believe me when i say the taste is 10 times better when you clean your own calamari, altough i know most people find it difficult, its really not.
