On-Pot delicious Red Pesto flavoured Beef with Rice – I used Peas and Sweetcorn which goes so well but you could add Peppers or Mushrooms.
INGREDIENTS (serves 4)
500g Beef Mince
1 tbsp Smoked Paprika
1 tbsp Garlic Granules
1/2 tbsp Oregano
1 Onion, diced
1 Red Pepper (optional – I swapped out for Frozen Peas)
1/2 tbsp Garlic Puree or fresh garlic
1 tbsp Tomato Puree
4 tbsp Red Pesto
400g Passata
1 Chicken or beef stock cube/pot
120ml Single Cream (light and dairy free versions will also work)
Salt & Pepper
500g Cooked Rice (you can use my rice method in the ninja or use packets of microwave rice)
870g Cheese (cheddar, Red Leicester, mozzarella)
