Could you possibly add maybe 1/2 to cup of liquid to allow the chicken to be less dry? (I would probably use a chicken stock instead of water.)

The chicken looked a little pink to me; chicken is like pork it should be to the point that it is solid white inside. Only beef differs in this regard.

I like your cooking style! I actually prefer whole chicken or legs because you get a lot of flavor from the marrow. You can break the bones up somewhat, or just let the slow cooker do it's thing. Love onion powder, I use stuff like that too. What I would do differently is, I would dice the skin and add it to the pot. I love the flavors from the skin of the bird. I'm not a huge fan of chicken filés. lol! 🙂

You are my kind of cook! I get so frustrated with recipes that call for 50 different ingredients, half of which I never heard of and the other half require a worldwide search to obtain.
