Tandoori Pasta Recipe:
Butter – 3 tbsp
Onion (finely chopped) – ½ Cup
Green Chilli (finely chopped) – 3 nos
Ginger Garlic Paste – 1 tbsp
Kashmiri Chilli Powder – 1 tsp
Coriander Powder – ½ tsp
Cumin Powder – ½ tsp
Black Salt – ¼ tsp
Chaat Masala Powder – ¼ tsp
Garam Masala Powder – ½ tsp
Cardamom Powder – ¼ tsp
Kasuri Methi – ½ tsp
Capsicum (finely chopped) – ½ Cup
Maida – 2 tbsp
Milk – 500 ml
Salt – ¼ tsp
Black Pepper Powder – ¼ tsp
For Smoky Flavour:
Charcoal (hot) – 1 no
Oil – ½ tsp
To cook the pasta:
Pasta (any shape) – 2 Cups
Water – 1 Litre
Salt – 1 tsp
Other Ingredients:
Grated Cheese – ¼ Cup
Coriander Leaves (finely chopped) – 2 tbsp
For the Cheesy Crust (optional):
Mozzarella Cheese (grated) – ½ Cup
Coriander Leaves (finely chopped) – 1 tbsp
Red Chilli Flakes – ½ tsp
Cooking Instructions:
1. Heat butter in a pan and add the onion and green chilli. Saute until the onion turns translucent.
2. Add ginger garlic paste and all the spice powders. Saute for 2 minutes on low heat.
3. Add the capsicum and saute for 1 minute.
4. Add the maida and saute for 2-3 minutes.
5. Add the milk gradually while mixing continuously. Add a little bit of the milk, mix and then only add more milk.
6. Once all the milk is added, add salt and pepper, and mix. Allow it to simmer for 2-3 mins.
7. Remove it from the stove. Place a metal bowl inside, with a piece of hot charcoal. Pour a few drops of oil on it, cover it immediately and rest for 2 minutes. After that, remove the charcoal. Cover the sauce and set aside.
8. For cooking the pasta, bring water to a boil and add salt. Add the pasta and cook for 7-8 minutes.
9. Remove the pasta and add it to the sauce. Heat it up and and mix until evenly combined.
10. Add grated cheese and coriander leaves, and mix. Remove it from the heat.
11. This next step is optional. Transfer the pasta to a heat-proof bowl. Sprinkle Mozzarella cheese, coriander leaves and red chilli flakes on top.
12. Bake it in a hot oven at 200°c for 7-8 minutes or until the cheese melts and starts turning golden brown.
13. Remove from the oven, serve hot and enjoy!
Cooking Tips:
1. If you do not have black salt, you can skip it and increase the quantity of regular salt accordingly.
2. The smoke step is also optional but recommended for a smoky tandoori flavor. You can use charcoal from your local cloth iron vendor, from a Hookah shop, or you can buy it online.
3. Baking in the oven to get a cheesy crust is optional. You can skip it and serve the pasta directly. Otherwise, you can add some Mozzarella cheese in the pan itself, cover it without mixing and cook on low heat for 3 minutes. This will also give you a cheesy layer on top.
4. If your oven has an option to only heat from the top, use that mode. This is better for the cheese to melt without overcooking the pasta.
