Ingredients

6.35 oz dark chocolate
1 stick or 128g of unsalted butter
2 egg yolks
2 eggs
¼ cup sugar
Pinch of salt
3 Tbsp all purpose flour

To garnish
Fresh raspberries
Powdered

1) Preaheat your oven to 430F
2) chop your chocolate and slice your butter.
Add to a double boiler and stir until melted. Then set aside.
3) In a large bowl, add your eggs, egg yolks, sugar and a pinch of salt . Vigorously whisk until pale. Add your chocolate mixture into your egg mixture and gently fold together. Sift in your flour and fold once again.
4) Butter and sugar 3 6oz ramekins.
5) Pour your batter evenly into your ramekins and bake for 11-13 minutes.
6) Remove your lava cakes from the oven and Let cool for 5 minutes.
Invert onto a plate and garnish with raspberries and powdered sugar.
