Brother the breast should always read 165 and you'll know the chicken is done. And if your worried about drying out the dark meat lol if you cover the dark side of the bird with foil, you'll get a juicer bird.

Still waiting on your version of a smoked short rib Ragu. It was a big hit for my family. I did the short ribs three ways actually. I smoked a few, cooked a few on my homemade Chud Box, and seared the rest off in a cast Dutch oven. Just like to see your take on it.
smoked chicken skin is too rubbery for my under bite, lol. Whole skin slides off on the first bite. this recipe but over live fire is my go to for BBQ chicken.
All the cooks, simple are great for the quick weeknight meals, but love the deep dive videos as well for weekend cooks. Keep them coming! Great work.

Yup I like things that can be cooked and you are eating in just a few hours, not an all day affair especially if it's cold outside.
Definitely love the basic everyday meal type videos. I mean I like em all, right? But as an amateur at home smoker (22" SNS Deluxe) I live to get new ideas for meals. It's a lovely Las Vegas evening and I'm actually smoking some FAT pork chops for dinner right now! Cheers!
I love BBQ. But in general I do not like food to be sweet…in other words no brown sugar in the BBQ sauce. Food = Savory, Desert = Sweet. With very few cross over exceptions. Don't like sweet cornbread either. Muffins + Sweet = Good. Cake or cupcakes + Sweet = good. Cornbread + Sweet = confusion Is it a dessert? I do like BBQ Sauce but I make it with no sugar and the commercial brands I look for have the least sugar. However, a fun video! Thanks!

Cooked chicken in so many different ways and I have to say spatchcock is my favourite. Cooks fast, tender breast, crispy skin, easy to carve – hard to beat!

Wet brine in a cooler full of ice & salt water.
Love all the recipes including the simple ones, the tricky part for myself is the fact only have a masterbuilt electric smoker that's a stack so it's hard to replicate anything that's not direct heat lol. Looks fantastic though

Yes Mr Chud I think simple recipes is a great idea because much as we'd not admit it , a lot of people stick to the simple recipes . Like this video for example , i don't BBQ enough chicken 🍗🍗
