I like NY strip and have one ready to go. I would usually cook it very simply using the techniques you/ve shown, but the idea of a luxorious sauce looks delish so will get some shallts, brandy and heavy cream; the other ingredients I already have. I had ordered organic beef tallow from an online company located in the Midwest, but now all I have left is their lard and duck fat. I imagine the lard should work out okay. I used the duck fat when I'm making chicken with wine. Thank you and Merry Christmas, Happy Holidays!
