  1. I love cheesesteaks too but I might even like pork better now. Not BBQ style only south philly style.. a nice roll, SHARP provolone, juicy meat and aus jus and for me I like that a lot of places offer the garlicy spinach on it instead of the broccoli raab

  2. No fennel in a roast pork. Use a pork loin (as fatty as possible–if it's too lien then just add a piece of pork shoulder). And you can marinate the pork overnight in olive oil, salt, pepper, garlic powder (or minced garlic) and rosemary. When cooked make a sammy with long hots and sharp provolone.

  3. I'm from So. Philly and I approve of this recipe. Personally, I like long Hots or cherry peppers on mine. And I'm so glad you didn't sear the pork first – it settles a long-standing argument between my husband and me – my family never seared the pork!

  4. Ok this looks amazing.
    The only thing I’m doing differently is the cheesing of the bread. If you follow Brian’s directions and cheese both sides, you’ve created a shield for the au jus that inhibits it from penetrating the bread. Cheese ONE side and let the juices sink in! Delish!

  5. The roast pork sammich is better than cheese steak. If you go to Philly , the 2 best places are Dinic's roast pork with brocolli rabe( pronounced rob) their cheese that is sharp , & John's which we like best, but they use spinach instead of brocolli rabe & their cheese is not quite as sharp,both places are great though

  6. I don't disagree with your bread choice at all. Imho, I would "belly" the bread with gently removing about half of the center portion of cut bread. I think the sandwich is easier to eat that way. I am not a fan of broccoli rabe, and would substitute grilled onions. Of course, I would taste the pork first before putting it on bread. I love the flavor of freshly ground black on pork, but it was cooked with red pepper flakes.

    You can’t go wrong with John’s Roast Pork, they also make excellent cheesesteaks. DiNics in Reading Terminal is a classic, they also have an Italian roast pork which is a personal favorite. If you want something a little different Vincenzo’s pairs broccoli rabe and sharp provolone with meatballs and it’s fantastic.

  8. I was the cook at our tailgating at the Eagles games for 6 years. I bought my rolls at Carangi's the morning of gametime. This did a great example of a sliced pork sandwich. Also, before you die, go to John's roast pork in South Philly. I will try this at home now. Side note: i never cooked a hotdog or hamburger while tailgating. That is amateur cooking.
